Peanut Butter Oat Cookies

I’ve always had a thing for peanut butter cookies. I’m just crazy about peanut butter in general and it is something Lexi has inherited from me. For some reason we had loads of peanut butter and oats in our pantry and so we whipped up a batch of peanut butter oat cookies.

They’re sweet, buttery, and utterly decadent. And they are especially delicious with tea or coffee!

Baking With Kids

Cooking and baking with kids present a huge number of educational opportunities. Baking can give your child lots of opportunities to develop and use the hands in a coordinated way.

This recipe is particularly great for developing good bilateral coordination skills. Rolling balls of dough and flattening them are excellent ways of letting kids practice.

Bilateral coordination skills can help children to tie shoelaces, cut with scissors and draw a line with a ruler.

Peanut Butter Oat Cookies

This is the perfect recipe for slightly older children who want to start baking on their own. It is simple and easy to follow. Lexi, who is 7 years old, made these cookies with almost no input from me.

We have some basic safety rules in our home for when Lexi is cooking or baking on her own. She always asks permission first, so I can be around to help if needed. She is very good about washing her hands and cleaning as she goes. She doesn’t lick anything that contains raw egg. And lastly, she always calls me to assist with getting things in and out of the oven.

Ingredients
  

  • ¾ cup all purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup butter softened
  • ½ cup peanut butter
  • ½ cup white sugar
  • ½ cup brown sugar packed
  • 1 egg
  • 1 tsp vanilla essence
  • 1 cup quick cooking oats

Filling

  • 3 Tbs butter softened
  • 1 cup icing sugar
  • ½ cup peanut butter
  • Tbs heavy cream

Instructions
 

For the cookies

  • In a large bowl, cream together ½ cup butter, ½ cup peanut butter, white sugar, brown sugar, and vanilla. Add egg and beat well.
  • In another bowl, combine the flour, baking soda, baking powder, and salt. Add these dry ingredients to the creamed mixture. Stir. Add oats and stir.
  • Drop by teaspoons onto greased baking sheet, and press each mound down with a fork to form 1cm thick cookies. Bake at 175 °C for 10 minutes, or until cookies are a light brown.

For the filling

  • Cream 3 tablespoons butter with the icing sugar, 1/2 cup smooth peanut butter, and the cream. 
  • Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.
